Owner Scott Sebastien didn’t just grow up in Opelousas, Louisiana—he grew up steeped in Cajun culture. The son of Annette, a legendary home cook known for feeding football teams and crafting duck dinners that still linger in the memories of Scott’s hometown, he learned early about the power of bringing people together with food.
A former all-state linebacker turned LSU accounting grad, Scott built a career managing fast-paced restaurant franchises, but his heart never strayed far from the flavors of his mom’s kitchen. Years later, a visit to the original Best Stop in Scott, Louisiana, reignited that spark. “The food tasted like home,” he says, “and the people felt like family.” Soon, a vision took shape: to bring that same warmth and authenticity to a community hungry for tradition.
Baytown, a growing city with a blue-collar soul, reminded Scott of the tight-knit Louisiana towns he knew—hardworking, welcoming, and proud. “This wasn’t just a business decision,” he explains. “It was about finding a place that values culture, connection, and sharing a great meal with good people.”

Scott isn’t alone in this journey. By his side is Shane Matheson, a trusted general manager and friend of over 30 years. Hailing from Canada, Shane fell hard for Louisiana’s vibrant spirit. “It’s the people,” he says. “Their joy, their energy—it’s contagious.” Together, Scott and Shane foster a team-first culture where staff and customers alike are treated like family.
Rounding out the crew are seasoned pros like Lawrence, Amanda, Paul, and Monique, who’ve worked alongside Scott for decades. Their collective experience? Over 120 years of passion poured into every dish. “We’re a family,” Scott emphasizes. “And family takes care of each other—and the community.”
