Cracklins are also called gratons. They are made from pork skin that consists of skin, fat, and meat. The pork skin is cut up into cube sized pieces then dropped into hot hog lard in a cast-iron pot and cooked until golden brown. The skins float, crack and pop…C’est Bon!!!
