THE FACES OF THE BEST STOP IN BAYTOWN
Owner Scott Sebastien grew up in Opelousas, Louisiana, where the roots of Cajun cooking run deep. A former all-state middle linebacker and LSU accounting grad, Scott built a successful career owning and managing fast-paced restaurant franchises—but it was his mom Annette’s home cooking that first lit the fire. A true Cajun cook, Annette’s meals were always full of flavor, spice, and heart. She was known for feeding football teams and friends with love, and her duck dinners are still legendary in Scott’s memory.
So when his son introduced him to Best Stop years later, everything clicked. The food reminded him of home, and the people behind the brand reminded him of family. He visited the original location in Scott, LA, and knew right away he wanted to bring that same spirit somewhere it would be appreciated. After spending time in Baytown, it became clear—it was the perfect fit. The area was growing fast, the demand for authentic Cajun food was real, and most importantly, the community felt a lot like home: hardworking, welcoming, and full of pride. Scott saw not just a great business opportunity, but a chance to become part of a city that values connection, culture, and good food shared with good people. Baytown didn’t just make sense—it felt right.
By his side is Shane Matheson, a trusted general manager and longtime friend who has worked with Scott for over 30 years. Originally from Canada, Shane says it’s the people of Louisiana—their warmth, their energy, their loyalty—that made him fall in love with the culture. He brings that same spirit into the workplace every day, creating a team-first environment where everyone is treated like family.
The crew is rounded out with seasoned pros like Lawrence, Amanda, Paul and Monique, who have all been a part of Scott’s team for over 30 years. Together, this team has built something special for the Baytown community.
As for Scott’s favorites on the menu? You can’t go wrong with cracklins and a link of original boudin, but he’s also a big fan of the Dana Burger and Crab Burger.
